It is a flour with low ash values and suitable for use in bread making. It can be used alone in black ovens, stone base, tubular ovens or as the first flour for rotary and tunneling ovens. It is suitable for long kneading process in fork boilers and tolerant to wait up to 6-7 bases.  It has a high volume, smooth blade structure, thin crust, late staling and high water lifting feature and the ability to take more product. It is very resistant to long fermentation waiting periods and can stand up to the back bases without losing its color and shape.
